Recipe: Paleo Apple Crisp

I was driving to a wedding last Saturday and realized that I totally forgot to post this recipe! Last week was so hectic. I was sick for most of the week due to gallstone complications (I still have no idea what triggered it), then I had to shoot a wedding on Saturday in north Jersey and had to attend a wedding in Pennsylvania on Sunday before driving back home on Sunday night to make it to work on time on Monday morning. My Absence

I must have started this post 20 times already. Hello! It’s certainly been a while. February was very busy for us. I feel like I’ve said this a thousand times already, but it’s true! The most time consuming task throughout the entire month of February was our move. Snowed In?

There’s not much you can do during a blizzard except to wait it out, which is always fine with me. It doesn’t take much to convince me to stay warm inside for a weekend as opposed to going out and battling the 2+ feet of snow that’s falling sideways due to high winds. So when most of New Jersey woke up last Sunday morning to snow as high as their car’s roof, Erik told me to get dressed because we were going for a ride.

Surviving Disney With Hashimoto’s

It’s been too long! Wow, okay so I feel really bad about taking so long to make this post. There has just been so much going on. Just a week after our trip to Sleepy Hollow, Erik & I hopped on a plane to Orlando, Florida with his family to spend 8 days in Disney World! The trip was planned over the span of about 16 months. This was crucial for me due to my dietary restrictions and other symptoms and side effects of living alongside Hashimoto’s. With that said, this post will outline how I survived 8 days in Disney World with thyroid disease.
