Wedding Details

I’ve been so looking forward to making this post! I teased a lot about the little details Erik & I planned for our wedding throughout the last (nearly) 2 years, so it only seemed right to finally fill in the blanks. By now, it’s no secret that I enjoyed wedding planning and I sort of wanted to put some of our ideas out there to see if it can help anyone who’s currently planning for their big day as well. Recipe: Paleo Apple Crisp

I was driving to a wedding last Saturday and realized that I totally forgot to post this recipe! Last week was so hectic. I was sick for most of the week due to gallstone complications (I still have no idea what triggered it), then I had to shoot a wedding on Saturday in north Jersey and had to attend a wedding in Pennsylvania on Sunday before driving back home on Sunday night to make it to work on time on Monday morning. Recipe: Chewy Tigernut Flour Chocolate Chip Cookies

All of my time has been taken up by moving and putting in extra hours at work recently, which is why I didn’t get to post anything last weekend. Erik & I have been moving stuff to our new apartment on the weekends and using all our time during the week packing. It’s been so hectic!

We made plans to spend Super Bowl Sunday with my Mom since my Dad was away for the week. I figured it would be the perfect time to try out a new cookie recipe with TigerNuts!

Ashton’s Goals for 2016

I’m the type of person who normally opposes the idea of “New Years Resolutions.” I don’t believe in confining yourself to a 12 month time frame to change all the things you don’t like about what makes you who you are. I’ve always considered the idea cheapened by the fact that someone feels pressured to make a change strictly because it’s a new year. It’s bad enough to sit and correct each time we continue to write 2015 on all of our work for the next 6 months! I’ve always believed in making changes and setting goals because you feel motivated to do so, not because all your co-workers are going to ask you what your resolutions are on the first day back at work after the holiday season.

Ashton’s Albums of the Year

Wow, I can’t believe we’re at the end of 2015! I also can’t believe that this blog is nearly a year old already. It’s been so fun capturing the year in photographs and using this website as a platform to get my thoughts out there. Everyone who has mentioned my blog to me in conversation has heard me say how ‘accidentally therapeutic’ this process has been for me. I honestly started this blog for two reasons: to help others who may be going through something similar and to hold myself accountable for keeping my health in the forefront and to make sure my life and my diseases are two separate entities that live alongside each other and not at the mercy of one another. I had no idea that in my attempt to help others that I’d be opening up a passage way that would end up helping myself more than I ever thought possible.

Surviving Disney With Hashimoto’s

It’s been too long! Wow, okay so I feel really bad about taking so long to make this post. There has just been so much going on. Just a week after our trip to Sleepy Hollow, Erik & I hopped on a plane to Orlando, Florida with his family to spend 8 days in Disney World! The trip was planned over the span of about 16 months. This was crucial for me due to my dietary restrictions and other symptoms and side effects of living alongside Hashimoto’s. With that said, this post will outline how I survived 8 days in Disney World with thyroid disease.

A Week In The Life

I took a different (& new) approach for my blog this week! Since this blog started back in February of this year, I’ve been showing all of you what types of adventures and activities I get up to on the weekends. Lately I’ve been inspired to do more iPhoneography using new techniques and skills that I’ve been studying from some of my greatest inspirations on Instagram and other social media platforms. With that said, I decided to challenge myself by preparing for this weekend’s post by documenting not just my weekend, but an entire week of my everyday life using nothing but my iPhone 6. Recipe: Gluten & Dairy Free Salted Chocolate Brownies

I decided to try something new this week and try my hand at baking! Now, anyone who knows me knows that I am not great in a kitchen. Cooking and baking is not my strong point whatsoever – I’m really lucky to have Erik who is the complete opposite. He’s always whipping up really great meals for us on a daily basis.
